Trader Joes Vegetable Hash Soup (Gluten Free, Paleo)

VEGETABLE HASH SOUP

This super simple and quick soup is a fall favorite. Packed with wonderful veggies and protein, it is perfect on a cold fall night. Most of the ingredients you can find at Trader Joes! 

INGREDIENTS: 

  • 1 container of Trader Joes Holiday Vegetable Hash 
  • 2 TBS of olive oil 
  • 1 cup organic coconut milk 
  • 1/2 cup chicken bone broth (can use vegetable broth if want vegan)
  • 1/4 tsp salt 

 DIRECTIONS: 

Saute the Trader Joes holiday vegetable hash in olive oil until soft and slightly brown in a frying pan. Next, combine coconut milk, chicken bone broth and salt in a sauce pan and heat for 5 minutes. Pour vegetable hash and milk/broth into a high speed blender or food processor and blend well. Serve immediately. Enjoy
