Incorporating veggies into your diet or your kids diet might seem like a challenge. Spinach is an easy way to get your greens in and have little to no taste. These spinach banana oat pancakes are delicious. Packed with protein, veggies and fruit they are great for breakfast or for a snack. Make extra, freeze and pop in the toaster for future meals.
- 2 cups rolled oats
- 1/2 teaspoon cinnamon
- 2 teaspoons baking powder
- 2 large spotty bananas
- 1-2 cups spinach
- 3/4 cups dairy free milk
- 2 eggs
Throw all in a food processor and blend very well. Coat pan and cook on low until they are fully cooked. Enjoy!!
