Protein Banana Oat Muffins
This protein banana oat muffins recipe will become a staple in your house!
Packed with oats, banana, almond flour, and plant based protein it is nutritious and also delicious. Make a bunch and store in the fridge or freezer for future snack or breakfast.
INGREDIENTS
1/2 cup oat flour
1/2 cup almond flour
3⁄4 cup old fashioned oats
2 tablespoons Super Pop vanilla protein blend
1⁄2 teaspoon baking powder
1⁄3 teaspoon baking soda
1⁄2 teaspoon salt
1⁄2 cup coconut sugar
1⁄3 cup grapeseed oil
1⁄3 cup almond milk, plain
1⁄2 teaspoon vanilla extract
1 banana ripe, cut into small pieces
1⁄3 cup semi sweet vegan chocolate chips
DIRECTIONS
Preheat oven to 350 degrees.
Combine banana, oil, almond milk, vanilla, into a food processor and blend. Add in the dry ingredients and blend. Fold in the chocolate chips.
Grease muffin pans. Bake for 20 minutes or golden brown.
