PEANUT BUTTER
CHOCOLATE CHIP COOKIES
These vegan, flourless peanut butter chocolate cookies are soft, chewy, and super easy to make. They also have added veggies!! Great for snack or even breakfast on the go! Enjoy!
Ingredients
- 1/2 cup peanut butter
- 1/4 cup grated carrots
- 3 tbsp non-dairy milk of choice
- 1/2 tsp pure vanilla extract
- 1/2 cup quick oats
- 1/4 cup coconut sugar
- 3/4 tsp baking soda
- 1/8 tsp salt
- 2 - 5 tbsp chocolate chips
Instructions

Pre-heat oven to 325 degrees. Place all ingredients in a food processor and blend. Batter will be wet so gently place spoonfuls on a baking tray. Bake for 8 min, then let cool completely before handling, which allows the cookies to firm up.
