Leftover Sweet Potato Cookies! (Oat based, Gluten Free, Dairy Free)

If you have leftover sweet potatoes, then here is an easy and nutritious cookie recipe incorporating them. Enjoy!

INGREDIENTS 
  • 1 cup roasted mashed sweet potato 
  • 1 ripe mashed banana 
  • 1/4 cup maple syrup 
  • 2 cups old fashioned oats
  • 1/2 cup tapioca flour 
  • 1 Super Pop Churro bar crumbled 
  • 1 teaspoon vanilla
  • 1/2 tsp baking soda 
  • 1 teaspoon cinnamon 
  • 1 TBS melted coconut or oil oil 
  • Optional: 1/2 cup chocolate chips 

DIRECTIONS

Combine all in a bowl and blend well. Blend in the chocolate chips last. 

Bake at 325 degrees for 10 minutes.
