Healthy Pumpkin Donuts or Muffins (Gluten Free, Dairy Free)

These flourless almond butter pumpkin muffins are super easy to make and have no oil or refined sugar. They have almost 6 grams of protein per donut/muffin and are soft and fluffy. Enjoy! 

Ingredients

  • 1 cup almond butter 
  • 3/4 cup canned pumpkin 
  • 1/2 cup maple syrup (or less if you prefer less sweet)
  • 3 large eggs
  • 2 tablespoons pumpkin spice
  • 1 tsp baking soda
  • 1/2 tsp salt 

Preheat oven to 350 degrees. Grease donuts or muffins pans. 

Blend all ingredients in a blender or food processor. Pour in greased pans. For donuts bake for 13-15 min and muffins pans 16-18 min.
