PB Churro Chickpea Blondies (Gluten & Dairy Free)

These PB cinnamon (churro) chickpea blondies are to die for! 

Packed with plant-based protein and our delicious PB Churro bars, these blondies are healthy and nutritious you can even eat them for breakfast! They are also gluten, dairy and refined sugar free! 

  • 1 can of chickpeas
  • 1 tsp baking powder 
  • 1/4 tsp salt and baking soda 
  • 1/2 cup coconut sugar 
  • 1/3 cup oat flour 
  • 2 Super Pop Churro bars  (crumbled)
  • 1/4 cup apple sauce 
  • 1 TBSP oil (we used avocado)




Preheat oven to 350 degrees. Drain and rinse beans well. Place all ingredients in a high speed blender and process until very smooth. Pour mixed in a 8x8 greased pan. Bake for 30-35minutes. They will look a little undercooked when you take them out, but they will firm up as they cool.
