Banana Blueberry Muffins (Gluten Free, Paleo, Dairy Free)

 

These muffins are packed with fruit, healthy fats and protein. Great in the morning with grass fed butter or on the go! 

  • 3 bananas
  • 1 cup frozen or fresh blueberries 
  • 3 eggs
  • 3 tablespoon honey 
  • 1 tsp vanilla 
  • 1 tsp baking soda 
  • 1/2 tsp baking powder
  • 2 cups almond flour
  • 1/2 cup tapioca flour
  • 1/2 cup flax meal 
Throw all in a blender (minus blueberries) and mix well. Add in blueberries. Pour into cupcake liners/muffin pan. Bake at 350 degrees for 20 min or until brown.
