Protein Oat Cake With Hidden Veggies (Gluten, Soy & Dairy Free)

  • 1 cup oat flour (gluten free)
  • 1/2 cup tapioca flour 
  • 1/4 cup flax meal 
  • 2 TBS Super Pop vanilla protein blends 
  • 1/2 cup chocolate chips 
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup grass fed butter (softened) 
  • 1/4 cup coconut sugar
  • 1/2 cup applesauce (plain, unsweetened)
  • 1 cup shredded carrots 
  • 1 banana 
  • 1 tsp vanilla
  • 2 eggs


  1. To begin, preheat your oven to 325 and cake pan with no-stick spray.

  2. In a large mixing bowl, add your dry ingredients and stir them together (oat flour, tapioca flour, vanilla protein blends, flax meal, coconut sugar, cinnamon, baking powder, baking soda, and salt).

  3. In a food processor, add your melted butter, carrots, applesauce, banana, vanilla and eggs and blend well.

  4. Pour your wet ingredients in your dry ingredients and blend well until smooth.  

  5. Pour mix in cake pan and bake for 30-40 min or tooth pick comes out clean.
