Applesauce Banana Oat Muffins (Gluten Free)

APPLESAUCE BANANA OAT MUFFINS 

These gluten free oat based muffins are the perfect grab & go breakfast or snack! Make extra and throw in the freeze for when you don't have time to bake/cook. 

They are light and fluffy and smell amazing while baking in the house! 

Ingredients: 

  • 1 cup oat flour (gluten free)
  • 1/2 cup tapioca flour 
  • 1/4 cup flax meal 
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup grass fed butter (softened) 
  • 1/4 cup coconut sugar
  • 1/2 cup applesauce (plain, unsweetened)
  • 1 banana 
  • 1 tsp vanilla
  • 2 eggs

Instructions:

  1. To begin, preheat your oven to 325 and spray a muffin tin with no-stick spray.

  2. In a large mixing bowl, add your dry ingredients and stir them together (oat flour, tapioca flour, flax meal, cinnamon, baking powder, baking soda, and salt).

  3. In a food processor, add your butter, coconut sugar, applesauce, banana, vanilla and eggs and blend well.

  4. Pour your wet ingredients in your dry ingredients and blend well until smooth.  

  5. Pour mix into muffin tins 3/4 way. 

  6. Bake in the oven at 325 degrees for for 15-20 minutes, or until lightly brown and a toothpick inserted comes out clean..
